Finally Friday! Cuba Libre

In college, I loved me a good rum and coke!  In fact, I think that’s why I got my first cavity…from all the sugar and carbonation in the coke!

I adapted this recipe from the Chocolate Chip Cookies recipe from Vegan Cookies Invade Your Cookie Jar.  I used this recipe, but instead of adding chocolate chips…I used Toffee Bits and Shredded Coconut.  OMG…these were great!
